The Pho Burrito at Chuey Fu’s
Have you ever had Vietnamese pho? Have you ever had it… in a burrito?
If you are ever in Denver, Colorado, one of my favorite hidden gems is the Pho Burrito at Chuey Fu's in the Santa Fe Arts District.
The first time I heard of the burrito, I thought: "How do you put soup in a burrito?"
If you've read or watched my reviews, you know that I can't taste or smell. So, I tend to live vicariously through my friends. I've sold this Pho Burrito to at least a dozen friends. Sometimes I convince them to order the pho burrito, while I order the Korean BBQ Burrito, offering to split it so we can try both.
They make an oxtail bone broth and soak the rice noodles in the broth to give it that Vietnamese Pho flavor.
If you follow my reviews, you know that I can't taste or smell. So, I rely on textures and a combination of savory and sweet. The Pho Burrito is a perfect balance of savory, sweet and crispy, gooey, hot, cold, tangy, spicy, fusion deliciousness!
The rice noodles are silky and absorb the rich essence of the broth, giving each bite a smooth yet hearty feel. The beef is tender and juicy, breaking apart effortlessly as you bite into it. The fresh herbs and bean sprouts provide a crisp contrast, adding layers of crunch and brightness to the dish. The hoisin and sriracha sauces offer a slightly sticky, caramelized finish that coats your mouth, making each bite an adventure of textures.
The tortilla itself is soft yet firm enough to hold everything together. The blend of warm, seasoned beef, soft noodles, and cool, crunchy vegetables creates a textural masterpiece that keeps you coming back for more.
As you know, I can't taste or smell. So each time I bring a friend to try Chuey Fu's, I intensely watch for their reaction. It's usually right after they've taken a bite that they remember that I can't taste or smell, and that I'm looking for them to confirm my suspicions of the burrito. Almost every time, their eyes widen, they nod enthusiastically, and sometimes they even let out an audible, "Oh wow!" That moment is everything for me—it confirms that the Pho Burrito really is something special.
Chuey Fu’s has mastered the art of fusion cuisine, blending cultures in a way that feels natural, yet unexpected. The Pho Burrito is a testament to their creativity and ability to take a traditional dish and give it a completely new form while preserving the essence of what makes Pho such a beloved comfort food.
These are by far some of my favorite fusion burritos.
Pro Tip: Ask Them to Grill It
Here’s my secret move—ask them to grill the burrito. It adds an extra crunch and a beautiful toasted char that gives it a polished finish. Trust me, it makes a difference.
Why I Love This Dish
I might be half Mexican, but let’s be real—I’d eat spaghetti in a burrito. I just love the concept of taking great food and making it portable. And Chuey Fu’s? They were one step ahead, blending Latin and Asian flavors in the best way possible.
