Burritow Brings Homemade Perfection to Palma Central

On a holiday that’s all about indulgence, gratitude, and a little extra weight on the plate, my morning started with a local twist. At Palma Central Food Park in Tulum, Burritow, the only food truck serving breakfast, redefined my expectations of the classic breakfast burrito.

I was greeted by Nestor, the owner, whose passion for food is evident in every bite. His Bacon Breakfast Burrito earned a well-deserved 8.8 rating, and it’s not hard to see why. The handmade flour tortilla, buttery and crispy, wrapped around fluffy, juicy eggs and thick-cut, perfectly crispy bacon. But the real star? The roasted marinara sauce—a savory, smoky concoction of grilled tomatoes and sweetened jalapeños that elevated this burrito to something extraordinary.

Burritow isn’t just about food; it’s about a vibe. Even in the quiet morning hours, the charm of Palma Central is alive in the laid-back seating and the aroma of fresh ingredients.


A Sweet Goodbye
As I was leaving, Nestor gifted me their homemade flan to take home—a gesture that perfectly captured the spirit of Thanksgiving. The flan was a creamy masterpiece, balancing a velvety texture with just the right jiggle. Its caramel topping had a deep, almost smoky sweetness that paired beautifully with the silky custard.

Nestor shared that his wife takes immense pride in the branding for the flan, and it shows. The packaging was clean, professional, and inviting—a perfect reflection of the quality inside.


Thankful for Burritow
On this Thanksgiving Day, I found myself grateful not only for the incredible food but also for the stories behind it. Burritow is more than a food truck—it’s a labor of love, a celebration of community, and a testament to the power of small businesses to create something truly special.
