Exploring the deeper meaning of food in our lives through the eyes of a passionate foodie

Thank you for joining the One Bite Foodie Community. Would you mind kicking things off by sharing a little bit about you and your background?

Thank you! I’m excited to be part of One Bite Foodie: Behind the Foodie.

I’ve worn a lot of hats over the years—entrepreneur, tech innovator, designer—but at my core, I’m just a guy who’s always been fascinated by people and their stories. My background is pretty eclectic. I started out in lighting design back in 2002 and spent years working with luxury brands in the interior design space. Over time, I transitioned into tech, where I built and launched several platforms like Join inCrowd and Designwal—both focused on connecting communities in unique ways.

The idea for One Bite Foodie actually hit me while on a taco tour with international guests at a hostel in Cancun. We were all enjoying these incredible street tacos, but no one was really capturing that moment—the experience, the reactions, the feelings. That’s when it clicked for me. I realized there was a space for a platform where food lovers could do more than just write reviews. They could share their experiences through video, build entire profiles, and even turn their passion into a business.

So, with One Bite Foodie, I wanted to create something that was more than just a review platform. It’s a community for food lovers to connect, share, and grow their brand—all while celebrating the joy of food. I’ve had my own challenges, too, especially after losing my sense of taste and smell to COVID in 2021, but that’s made this journey even more personal for me. It’s about bringing people together and celebrating what makes food and community so special.

This is always a fun question. When you were a kid, what was your fondest memory about food? And how did it impact you to date?

Ah, this is a great question! I love thinking back to those early food memories. One of my fondest moments has to be when I was in elementary school—this must’ve been around 1985 or ‘86. We had an International Food Day, where each student had to bring in a dish that represented their culture. My friend Esteban, who was Argentinian, brought in these homemade empanadas, and honestly, those few bites have lived rent-free in my head ever since! The flavors were incredible, and that experience really stuck with me.

Now, I’m half Mexican and half German, and both grandmothers on either side were amazing cooks. On my dad’s side, we’d go to my grandma’s house and she’d serve up the most delicious Italian meals. Meanwhile, my Nana, on my mom’s side, was a master tamale maker. She’d gather all my Tías, and they’d start prepping tamales days and even weeks ahead of Christmas—it was a whole family affair. So, food was definitely in my blood from an early age.

Growing up in the 80s, though, the most “exotic” meal we had at home was Chinese takeout. You know, those folded paper boxes with the wire handle? I remember opening each box like it was a little present, trying to figure out what was inside. That sense of curiosity and excitement around food has never left me.

As I’ve gotten older, travel and some past relationships have definitely introduced me to new flavors and cooking styles, which have added to my appreciation for food diversity. But at the core of it all, I think those early experiences—the empanadas, the tamales, even the Chinese takeout—helped shape my love for food and the sense of community it brings. They’ve definitely impacted how I approach One Bite Foodie today, celebrating not just the flavors, but the stories behind each bite.

So, each Foodie has a different focus when it comes to food and beverage reviews. What type of food or beverages will you be focusing on? And, why?

Losing my sense of taste and smell was definitely a game-changer, but contrary to what most people might think, it hasn’t reduced my appetite or pushed me into a life of strictly healthy eating. Far from it! Now, when I eat or cook, I’m all about texture and the interplay between salty and sweet. Those are the two main sensations that drive me. Since I can’t experience flavors the way most people do, I focus on how different textures work together, how a dish balances between salty and sweet, and most importantly, the location and ambiance surrounding the meal.

When I give my reviews on One Bite Foodie, I focus on these aspects because, for me, it’s not just about the food itself—it’s the whole experience. The setting, the vibe of the place, the energy—it all plays a huge part in how we perceive and enjoy our meals. I truly believe that the best meals are shared over great conversation, whether that’s with family, friends, or even a complete stranger you just met.

So while others might hone in on intricate flavor profiles, my reviews emphasize texture, the salty-sweet balance, and the overall experience of the location. At the end of the day, food is more than just taste—it’s about connection, atmosphere, and the joy of sharing that moment with others. That’s what I want to capture with One Bite Foodie.

Hmm... a message to share with readers. I've always felt that food is much more than just a meal. Good food should inspire great conversation, laughter, and even love! As Anthony Bourdain once said, “Eat at a local restaurant tonight. Get the cream sauce. Have a cold pint at 4 o'clock in a mostly empty bar. Go somewhere you've never been.” This perfectly captures the spirit of adventure that food can bring into our lives.

To all the foodies and restaurant owners out there: I know it can feel intimidating to join a new platform and take to the streets filming and sharing your One Bite Reviews. But I want you to remember that every review you create has the potential to make a significant impact on a small mom-and-pop business. Your content can contribute to their visibility and success, providing them with the media coverage they truly need.

My hope is that One Bite Foodie not only makes it easier for you to share your culinary experiences but also empowers you to support local businesses, no matter how large or small your social network might be. Together, we can help these gems get discovered and thrive. So, let's get out there, share our food journeys, and make a difference, one bite at a time!
