As you approach the restaurant, you're greeted by the sight and aroma of a half pig roasting above an open wooden fire pit—a rare sight in Tulum, where pork is typically cooked on a skillet or in an oven. This unique cooking method infuses the meat with a rich, smoky flavor and ensures a tender yet crispy texture. In my One Bite food review, I gave the grilled pork tacos an impressive 8.9 rating. Though I can’t taste or smell, the textures and oils of the pork delivered an undeniable savoriness. Each bite revealed tender, juicy meat paired with crispy edges that elevated the entire taco. The creamy guacamole provided a smooth, buttery contrast, while the pico de gallo added a refreshing, juicy layer without overpowering the star of the show—the pork. I also tried bites with the chipotle and Verde sauces, both of which enhanced the tacos in their own way. However, the third taco I enjoyed exactly as served. The pork alone was a showstopper, requiring no additional flavor enhancements. If you're in Tulum, I highly recommend stopping by Siete Fuegos to experience this unique take on grilled pork tacos.
