Stepping into Palma Central on the outskirts of Tulum is like entering a vibrant cultural melting pot. The atmosphere is as alive as the salsa rhythms pulsing from the main stage, where dancers of all skill levels – from locals to tourists – sway together under the open sky. As you walk in, you're welcomed by a lineup of local vendors, showcasing handcrafted jewelry, aromatic essential oils, and unique local artwork. The semi-circle of gourmet food trucks surrounding the dance floor completes the scene, creating a casual, yet lively space where community and creativity thrive. My introduction to Palma Central came through an impromptu invite to salsa night from new friends I'd met at the Veleta Market. That first night, I savored Argentinian empanadas with a cold Pacifico, absorbing the scene under the stars. Since then, I’ve been back several times, working my way through a range of specialty items from the food trucks. But one stall kept calling my name: Buena Vida Burger Shop. Known for its plant-based menu with both meat and vegan options, I had my eye on their Indian Burger since day one. The Indian Burger was a unique twist, made with a lentil patty seasoned with curry and mustard, and topped with hummus, caramelized onions, sour pickles, lettuce, tomato, and a brioche bun. It was served with house mayo – a promising combo that had me intrigued. I admit, I initially imagined an Indian-inspired burger dripping with curry flavors, like tikka masala in a bun. But the real experience was subtler, more of a spiced lentil patty with a balance of Mediterranean flavors. With some encouragement from the Canadians I shared a table with, I decided to film an impromptu review. My rating? A solid 7.9. Here’s why: the patty had a texture that reminded me of a giant, well-seasoned tater tot, but I would have loved a crunchier, crisper finish. I found myself wanting more salt, and for the caramelized onions to shine through. The bun was soft, and while it was good, a toasted, firmer bun would have elevated the experience. To spice things up, I added sides like house mayo, BBQ sauce, jalapenos, and aoli, which added some depth but still left me wishing they leaned more into the "Indian" concept. A side of curry sauce for dipping could have taken it up a notch. Still, the ambiance of Palma Central truly complements the dining experience, with the live salsa, laughter, and the night sky over Tulum. I’ll definitely be back to try more items and soak in the lively scene, rating the Indian Burger 7.9 – a good vegan option, made memorable by its unique location and the unforgettable Palma Central vibe.
